About Gin Farallon
Our mission is simple: Use the best ingredients available to create the finest spirits we can make.
Launched in 2015, Gin Farallon is the result of two years of experimentation to find just the right combination of ingredients and technique. Coastal Spirits, LLC emerged in 2012, when Brad Plummer and his wife Denise set out to fill a void in the craft gin market. Brad believed many of the craft gins being created lacked a certain imagination and vitality—nuance and balance took a back seat to overpowering, two-dimensional flavor profiles.
Entrepreneur, writer, thinker, and student of all things craft distilling and drinks culture, co-founder Brad Plummer has a background in medical journalism along with his distilling knowledge. Plummer managed the daily operations of “The Auk,” the oldest continuously published academic journal in North America, specializing in ornithology. Additionally, Brad spent eight years with SLAC National Accelerator Laboratory.

Micro distilling allows us to distill precisely in single batches
Farallon Gin is an expression of our dedication to quality — curating premium ingredients from around the world to create unique flavors, and utilizing both traditional and novel production techniques in the service of making gin that is truly special. One of these novel production techniques that allows us to stay dedicated to quality is micro distilling. Micro distilling differs from other production styles based on smaller production quantities. You’ve probably heard both referred to as “craft.”
A micro distillery is defined as a small, often boutique-style distillery established to produce beverage grade spirit alcohol in relatively small quantities, usually done in single batches, whereas a larger distillery might run on a continuous distilling process. The American Distilling Institute defines micro distilling as: “Maximum production for a ‘craft’ or ‘artisan’ distiller should not exceed 50,000 proof gallons per year.” These small quantities help us express quality in everything we do.
